Six open roles across three cities. Every one has a pay band printed below, because an advert without a number wastes your afternoon and ours.

How we hire

Read the role, email the address at the bottom of it, and tell us in a few paragraphs what you have cooked or served and what you want to learn next. We do not need a designed resume and we do not use an application tracking system. A person reads every email, usually within four working days.

If it looks like a fit, the process is a phone call, then a paid trial shift at your normal hourly rate, then a decision within forty eight hours of the trial. We pay for trials because working for free is how this industry keeps people out of it. We will tell you no clearly rather than going quiet.

Pay bands are for the role as advertised. Where a role earns a share of the service charge, that is stated separately and is not counted inside the band.

Tribeca, New York

Kitchen

Five nights, Tuesday through Saturday. Service finishes at 11:00 PM and the kitchen is closed and clean by midnight.

  • Chef de Partie$28 to $32 per hour

    • Run fish, garde manger or entremet on the tasting menu
    • Three or more years in a professional kitchen, at least one on a tasting menu
    • Overtime paid at time and a half after forty hours, never absorbed

    • First or second kitchen job. We will teach you the rest
    • You will spend real time in the fermentation cellar and on the butchery bench

Nob Hill, San Francisco

Floor

Five nights, Tuesday through Saturday. Twenty eight seats, so the section is small and the guest contact is constant.

  • Sommelier$72,000 to $82,000 a year

    • Run floor wine service and manage a four hundred bin cellar
    • Plus an equal share of the service charge pool, historically $14,000 to $19,000
    • Certification is welcome and is not a requirement

Front of house

These two roles are open continuously across all three cities because they are the hardest to keep staffed and the most important.

    • The clearest promotion path in the building. Three of our current cooks started here
