Three Rooms

Each kitchen buys from its own region and writes its own menu. The cooking method is shared. The dishes are not.

Tribeca

The original room, open since April 2016

A former textile loading bay on Hudson Street, twenty two feet wide with a pressed tin ceiling we left exactly as we found it. Twenty six seats in the dining room, eight at the kitchen counter, fourteen at the bar and fourteen more behind the oak door of the Salle Noire. This is the only location with a chef's table.

Open since October 2021

A brick coach house from 1847 with a courtyard that seats twelve more from May through September. Thirty two seats inside, no counter, and the only Maison Noir that serves lunch. Chef de cuisine Amara Boateng buys from the Chesapeake and from four farms in Loudoun County, so the menu here leans harder on crab, oysters and whatever the Virginia growers have that week.

The newest room and the smallest, on the Taylor Street slope two blocks from the cable car turn. Twenty eight seats wrapped around one open kitchen, which means there is no back of house to hide in and no music loud enough to cover a dropped pan. Chef de cuisine Rafael Ibarra runs it, and roughly a third of his menu comes from the Alemany and Ferry Building markets on the same morning it is served.
